During the summer I find I want food on the go and something light is usually best. I know my taste buds and that I heartily enjoy a good cashew cheese spread.
Cashew cheesy spread:
1 1/2 cup cashews (soaked)
1/2 tbsp chili powder
1/2 tbsp cayanne powder
1/2 tbsp paprika
2 cloves garlic
1/4 tsp salt
NOTE: Be mindful of the spices, these are my personal preferences, you do not have to put so much.
It was just as simple as adding the items to a food processor/high powered blender and adding 1/4 cup of filtered water as needed. If you like your cheese with texture don’t over process, it’s up to your individual taste.
I washed a few swiss chard leaves and wrapped everything up with: julienne sliced carrots, avocado, celery, and red cabbage.
Easy and the only prep time was the pre-soaked nuts and blending. It didn’t take very long at all and after having a few of these I was pretty full. Along side a green juice I was incredibly happy with this meal. Totally a summer easy meal.
