Vegan Mofo: Breakfast Bento!

Usually I am a planner, I think about the minute details and have things ready in a military fashion. Not today. I wasn’t sure what to do, but I wanted breakfast.

I assembled my ingredients and looked figured a why not throw in as many things as I can think of that will make this pancake bento taste amazing.

Here’s my recipe for Gluten Free Vegan pancakes:

1 1/3 cups gluten free flour
1tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 tablespoon of agave!
1/2 tsp of vanilla
2 tbsp of canola oil
3/4 c + 2 tbsp warm water
1/4 tsp cinnamon
1/4 tsp of nutmeg
1 serving of apple sauce (I used Presiden’t Choice cup)
1 tbsp of cocoa
2 tbsp corn starch

You can eliminate the applesauce or increase the corn starch to 4 tbsp. Mine did turn out a bit runny.

Now that I think about it, I could have used some agar agar or vegan gelatin, or xanthan gum, ah well.

I wish it was more obvious the pancake shape was supposed to be a cat. I couldn’t even fathom filling the whole bento box. I was flabbergasted with just one portion of the box.

The rest of the ingredients are pretty simple:
– peach cut in star shape
– macintosh cut in star shape
– carrots cut into sticks
– strawberry
– tiny ball of Tofutti
– romaine lettuce for decoration

There you have it! My very first attempt. Hope you like it.

      Thank you! I am a crazy cat lady and of course I have a cat cookie cutter. I was just worried the pancake was too thick to show the shape. Thank you for the kind words! It was my first try and I had no idea what to do. I’m so glad it made people happy! :) I really appreciate the comment.
