Vegan Gluten Free German Potato Salad

Potato salad is such a fun feel good comfort food, especially during the summer and pot lucks. Even though it’s September now, I somehow think by making summer foods I will magically extend summer.

Just to be clear this is a variation of Happy Herbivore’s recipe.

I made a vegan gluten free version:
Ingredients:
– 3 – 4 small red potatoes
–  2 small sweet potatoes
– 1 tbsp Dijon mustard
– 1/4 cup Rice vinegar
– 1 med white onion
– 2 whole green onion
– 3 tbsp fresh dill
– 4 garlic baby dill pickles
– 1 1/2 tbsp agave syrup
– pepper/salt to taste

The recipe is pretty simple, boil the potatoes set aside to cool; add the wet ingredients together, mix well and then add the potatoes.

As my husband @MathieuLF can’t have soy, to make up for this, I have come up with my own version of vegan bacon bits with baked shiitake mushrooms. Easy to make: in a bowl mix sliced shiitake mushroom in oil and salt. Let sit for 5-10 minutes, then bake off in the oven at 500 degrees for 15 minutes or to your crispy texture preference.

If you like use soy sauce, or make your own vegan/soy free version

Non-soy Soy Sauce:

  • 4 tablespoons vegetable bouillon broth (non salted)
  • 4 teaspoons balsamic vinegar
  • 2 teaspoons dark molasses
  • 1 teaspoon fresh garlic
  • 1 1/2 cups water
  • 1/2 tablespoon table salt

Incredibly tasty!
