Awesome Vegan Nachos!

Okay, be warned, the pictures aren’t great, but dang almighty the nachos you are about to read about are awesome; yes, yes they are.

Dun, dun, dun…NACHOS!

Ingredients:
– 2 tbsp Tofutti (plain or flavoured)
– 4 tbsp home made salsa (red onion, tomato, pineapple, curly parsley)
Tortilla chips
Baked beans or refried beans
Daiya (Pepperjack/Cheddar)

I had a recipe similar to this in high school once and I nearly lost my mind, it has clearly stuck with me for a while now.

First, I smoothed out the Tofutti on a plate, then assembled the other ingredients, it doesn’t really matter what order you put things in, it’s up to you.

vegan, gluten free, air eater, Nachos covered with Daiya Cheese Cheddar and Pepperjack

You can layer the ingredients, then put chips on top and layer again to make a casserole type dish if you really want the “ultimate” experience. I then microwaved the dish for 45 seconds or so and dug in.

So simple, so tasty and pretty lazy; perfect for a comfort food kind of day.
