I was craving a baked good and decided to take matters into my own hands. I don’t have enough patience to develop my own gluten free mix, so I bought one from 1-2-3 Gluten Free. I used the Meredith’s Marvelous Muffin/Quickbread mix. The recipe on the back called for 1 cup of blueberries and 1 cup of butter, I didn’t really listen to it. I added my own ingredients and changed things based on what I thought would go well.
Here’s what I did:
- 1 bag of Meredith’s Marvelous Muffin/Quickbread mix
- 3 cups of fresh blueberries
- 1 tbsp of vanilla
- 3 tbsp of orange juice
- 1 tbsp lemon juice
- 1/4 cup canola oil
- 1 cup almond milk
- 1 apple sauce portion
-1/2 cup Enjoy Life vegan chocolate chips
I’d suggest adding more almond milk or water if your mixture isn’t wet enough. The apple sauce is to substitute for eggs and oil instead of butter. I suppose I could have used Earth Balance soy free as well and just melted it down. The muffins turned out great, perhaps too blueberry, if that’s possible; making them very moist. I prefer this over the dried piece of rock that gluten free mixes usually become. The mix smelt great, it had a lot of cinnamon and I really loved how easy the mix adapted. Other mixes I’ve tried do not allow for any deviation from the given recipe.
I have a tin that has garden bug shapes: butterfly, lady bug, bumble bee, so cute! I just had to use this tin; hope you can tell the shapes.
I’m a huge fan of cute tins, there are so many out there, I’ve got my eye on a castle one. Oh, the pretty things you can make if you have the time. I didn’t feel like frosting these or anything, they’re perfectly good as is.
