I’ve heard so much about cashew spreads that I had to try for myself. First, even finding raw organic cashew nuts that didn’t come in contact with dairy/wheat/soy was incredibly hard. I finally found some at Panacea on Bloor street.
They were so nice and I really appreciated that everything in the store was vegan.
Ingredients:
- 1 cup raw cashews (soaked over night)
- 1 cup parsley
- 1/4 cup red/orange peppers
- 1-2 cloves of garlic
- 1 tbsp of lemon juice
- 1 tsp salt
- 2 tbsp water
I used frozen roasted peppers and I’m sure fresh peppers would do just fine. I processed that all together and out came a delicious tasting spread. If you’d like a garnish sauce, as a topping, I’d recommend taking some aside and thinning it out a bit with water till you get the consistency you like. I am going to use this as a sandwich spread, as a topping, and it’s delicious on basmati rice!
