Vegan Gluten Free Thai Spring Roll Recipe Video

Surfing Youtube I found this video recipe from Vegan Chef Tess Challis for Vegan/Gluten free Thai Spring Rolls.

Who doesn’t love a good Thai Spring Roll? So delicious and incredibly easy to make, not to mention very frugal, PLUS – they make you look like a rock star when you bring them to parties.

Here’s a recipe courtesy of below, but really, you can put in anything you want:
roll rice wrappers
¾ cup shredded carrots
1 cup chopped raw shitake or portabella mushroom thinly sliced
1 ¼ cup soaked bean thread noodle
1 1/2 cup sliced Napa cabbage
¼ diced white onion
1 tbsp fresh cilantro
1 tbsp fresh basil
1 tbsp fresh lime juice
1/2 cup shredded carrot
1 clove minced garlic
1 tsp ground ginger
1/4 tsp allspice
1 tsp sesame seed oil
1/2 tsp white pepper; if not available black pepper is fine
1 tsp ground coriander
1 tsp tamari sauce
1 tsp brown sugar
1 tsp chili paste (vegan friendly versions)
Small bowl of water to seal spring roll edges
1 tbsp coconut oil to sauté vegetables
1 cup vegetable oil for frying spring rolls
¼ cup warm water to soften spring roll wraps
