Ginger, Tamarind and Brown Rice Vermicelli Stir Fry

Most vegetarians/vegans I know are masters of stir fry. What else is so easy, fast and has nutritional elements?

Here’s what we made tonight:
air eater,
air eater,

– 2 tbsp tamarind paste mixed with 1 tbsp water
– bok choy
– fresh ginger
– green onion
– white onion
– garlic
– carrots
– celery
– shiitake mushrooms

Very tasty, ginger really makes a dish pop, more so than most ingredients.
